Wheat Free Sundays: The Gluten Free Girl and the Chef

 Shauna is the best baking teacher ever!  I started making my own all-purpose flour blend (rice, oat, brown rice, and corn with potato starch) and we've been using it for pancakes (from The Joy of Cooking). All you have to do is bake by weight instead of volume.  The best part is, I don't like soy flour or garbanzo bean flour, which is what is in all the pre-made all-purpose flours that you can buy (like Bob's Red Mill), so this way I can customize it to my tastes.  Thanks Shauna - you made my life (and my chef husbands) soooo much easier!
